Because it's simple to make, the key to vegetarian ramen in the stock! This is a healthy ramen that has a deep savoury flavour. Your husband, who likes meat, fish and ramen will shout "Delicious!" when he eats this! (Okinawa soba, by the way, is not the same as the "soba" noodles made from buckwheat, but is made completely from wheat flour, which is why this dish is 'technically' a 'ramen'...)

Salty ramen
Ingredients
3.5 litres water, 4 packs Vegeta Soup Mix, World Salt, a little pepper, 8 packs of Okinawa soba (noodles), 10 asatsuki leeks, 2 segments of garlic, 1/2 red chili pepper, 2 cups grape seed oil. |
1) Place the water and Vegeta Soup Mix in a pot for the soup and bring to the boil. Add salt and pepper to season.
2) Make flavoured oil by heating some grape seed oil in a frying pan, add the finely sliced asatsuki leeks, chili peppers, and finely chopped garlic, and fry on a weak heat till everything is a nice foxy brown.
3) Boil the noodles in very hot water.
4) Place the boiled noodles in dishes, pour on the soup and the flavoured oil.
(If some of the flavoured oil remains over, use it to fry rice or vegetables. Really delicious!)

Actually, salty ramen is quite difficult to make! It's hard to find a restaurant that serves really tasty salty ramen, so it's really good if you can make a delicious salty ramen at home. I don't get the feeling with this ramen that I'm eating a vegetarian ramen... |
