Fried veggie meat and cloud ear mushroom (Serves 8)
Fried veggie meat and cloud ear mushroom The crunchiness of the cloud ear mushroom and the soft texture of the meat make this a fun traditional Chinese dish to make and eat.


Fried veggie meat and cloud ear mushroom
Ingredients
1/2 cup thinly-sliced type veggie meat, 30g dried cloud ear mushroom, 2 long leeks, 1 section of garlic, 1 piece of ginger, some grape seed oil.
Seasoning: Veggie flour (remove the powdered Vegeta Soup Powder from one bag of soup mix, and mix with 1/2 cup flour and a little pepper), 1/2 cup sake, 2 tablespoons soy sauce, a little salt and pepper.

[Recipe]
1) Reconstitute the dried cloud ear mushrooms by soaking in water, cut the leeks into bite-sized lengths.

2) Soften the veggie meat by soaking in warm water, squeeze off excess water and dust with the veggie flour. Fry lightly in grape seed oil.

3) Heat one tablespoon of grape seed oil in a frying pan, fry the chopped garlic and ginger, then when a nice fragrance is coming off turn up the heat to strong and fry the leeks for about a minute. Add in the cloud ear mushrooms from 1) and the veggie meat from 2) and stir in the sake. Keep frying.

4) Add a little soy sauce and salt & pepper to season.

I really like cloud ear mushrooms and got all worked up just looking at the recipe! When I actually made it, the flavours had permeated into the veggie meat very nicely and it was very good to eat with rice. Quite surprising, really, that you can make such a delicious dish so easily with just veggie meat, cloud ear mushrooms and leeks!
