Vegetarian Spring Rolls (makes 20 rolls)
Vegetarian Spring Rolls Being vegetarian spring rolls, even if each one is quite large, you can put away quite a few of them at one sitting without a problem .

They may look hard to make, but if you try it you'll find it's quite easy and that this will soon become one of your regular favourites.


Vegetarian Spring Rolls
Ingredients
2 green bell peppers, 1/2 carrot, 2 shiitake mushrooms, 1 long Japanese leek, 1 bunch enokidake mushrooms, 1/3 cup dried cloud ear mushrooms, 1/3 bag (30g) spring rain (harusame) noodles, 1 segment garlic, 1 piece ginger

1 tablespoon sake, 1 bag Vegetas soup mix (with the powder removed from the bag), 600 cc water, 3 tablespoons katakuriko starch, a little pepper, appropriate amount of grape seed oil

20 spring roll skins


[Recipe]
1) Reconstitute the dried cloud ear mushrooms in water, chop the bell pepper, carrot, shiitake mushrooms, garlic and ginger into long, thin strips.

Cut the enokidake mushrooms into 3 cm lengths and cut the Japanese leek into thin slices.

2) Heat some grape seed oil in a frying pan, fry the garlic, ginger and leek, and when there is a nice fragrance coming off add in all the other vegetables and fry. Pour in the sake, Vegetas soup mix and water. Add the spring rain noodles as they are, bring to the boil and simmer for 5 minutes.

3) Mix the katakuriko starch into the same amount of water (3 tablespoons), then add to 2), mix well and when the whole thing begins to get a little viscous, turn off the heat. When cool, wrap in the spring roll skins and fry in grape seed oil.

Spring rolls can be quite filling, but they're not 'stodgy' and have a light texture.

Look complicated, but in fact are quite easy to make - so good and very delicious!

I had always thought I'd like to make spring rolls, but they looked a bit complicated... I tried this recipe and actually they turned out to be quite simple to make ! And since they are quite filling, I got quite full up on them!
