Veggie meat Mabo doufu
Ingredients
3 blocks "momen" tofu, 1 garlic segment, 1 piece ginger root, 1 long Japanese leek, 1/2 teaspoon sliced chili pepper rings
A: 1 cup mince meat veggie meat, 1 sachet Vegeta soup powder (with the powder removed from the sachet), 1/2 tablespoon unbleached white wheat flour
B: 1 tablespoon genmai miso, 3 tablespoons soy sauce, 500cc water, 2 tablespoons mirin, a little pepper
1 tablespoon katakuriko mixed with the same amount of water
Sesame oil, hot sesame oil (la oil)

1) Soften the veggie meat in warm water, squeeze out the water, coat with A. Cut the tofu into bite-sized cubes.
2) Finely chop the garlic, ginger and leek.
3) Pour ample sesame oil into a frying pan and heat, then fry the garlic, ginger and the chili pepper. When it gives off a nice fragrance, add the veggie meat from 1) and when the whole is nicely cooked through add the seasoning material B and the tofu and bring to the boil.
4) Sprinkle the chopped leek into 3), add in the katakuriko mixed with water. When the mixture thickens, it's done! Add a little hot sesame oil to taste.

100% vegetarian Mabo doufu sounds really insipid, but it's just like the real thing! It has a deep, rich flavour, I like it because it's really soft on the stomach, without the greasy feeling you sometimes get with Chinese food. |

Up to now I've been making Mabo doufu, but it's been too greasy and everyone just eats the tofu, With this vegetarian Mabo dofu, though, I get no meat left at the end, it all goes, and they even want more, it's so delicious. Now it's one of my family's regular favourites. 3 blocks of tofu for 5 people gives enough for everyone to enjoy, doesn't it! |
