The combination of apple and walnuts is a very vegetarian mixture. The clean and sweet-sour flavour of the marinade will stimulate your appetite! |
Walnut and apple veggie marinade
Ingredients
1/2 cabbage, 1/3 carrot, 1/2 onion, 2 teaspoons salt, 1 apple, 1/2 cup walnuts.
Seasoning: 8 twists of the World Salt mill, 8 tablespoons grape seed oil, 1.5 teaspoon maple syrup, 5 tablespoons apple vinegar, a little pepper.

1) Slice the cabbage and carrot into very thin strips, and slice the onion thinly.
2) Sprinkle 2 teaspoons salt on 1), mix it all together till soft, add the seasoning and mix, then place in the fridge to cool overnight
3) Cut the apple radially into 8 sections, then cut to 5mm pieces and place in salty water.
Break up the walnuts into appropriately-sized pieces.
4) Add the apple to 2) and mix. Place on serving dish and sprinkle on the lightly roasted walnuts.

Not too sour, and a nice, fresh taste that's just right for the hot season! You can eat a part of it as a salad right away without leaving it overnight, and then enjoy it again as a marinade the next day. The children really like it too (^_^)
