Shiso seed paste and bread |

It's not often that we get to eat shiso seeds. We often use the leaves of the shiso plant (sometimes known as the 'beefsteak plant' and which has two varieties, green 'aojiso' and a deep red 'akajiso'), but the seeds are also very good for you. They can be pickled in salt and made into a paste. This is a simple bread recipe that is very popular with our staff! |
Shiso seed paste and bread
Ingredients
8 slices of natural yeast bread
A: 8 tablespoons of salt-pickled (or plum vinegar-pickled) shiso seeds, 1/2 cup almond powder, 1 segment of garlic, 6 tablespoons of grape seed oil, a little pepper.

1) Grate the garlic and place in a bowl. Mix in all the ingredients from A.
2) Spread the paste from 1) evenly on the natural yeast bread, place in a toaster or oven and toast till the surface pops and crackles. Toast till a nice brown colour.
