A soup with plump, round chickpeas and lots of vegetables.
Very easy to make and super healthy; a tasty, healing-type soup.

Chickpeas and vegetable soup
Ingredients
A: 1 onion, 1 tomato, 6 potatoes, 1 garlic segment, 1 can of boiled chickpeas
B: 2 sachets of Vegeta soup powder, 2 litres water, 20 twists of the World Salt mill, a little pepper, a little coriander powder, grape seed oil, parsley

1) Finely chop the onion and garlic, cut the tomato into small pieces, dice the potatoes into roughly 1 cm cubes.
2) Heat a little grape seed oil in a saucepan and fry the onion and garlic to a light brown colour, then add the potatoes and tomato, then fry the tomato till tender.
3) Add the water and Vegeta soup powder to 2) and bring to the boil. Boil for 5-6 minutes.
4) Add the chickpeas to 3), and when the potatoes are soft add salt, pepper, coriander powder to taste.
5) Pour into soup bowls and sprinkle parsley!

The hot chickpeas are delicious, like sweet chestnuts!! Such a full-bodied flavour from such simple ingredients it must be the soup and the tomato that do it!

I wondered if this was really vegetarian cooking. It's become one of my favourites! The best thing for warming you up in the winter!
