Vegetarian mincemeat cutlet with nanban tare sauce (serves 4)
Vegetarian mincemeat cutlet with nanban tare sauce Veggie meat and cabbage fried 'cutlet' with sweet and sour nanban tare sauce and topped with lashings of veggie tartar sauce.

Full marks for volume and a healthy little dish with a bit of a technique to it.


Vegetarian mincemeat cutlet with nanban tare sauce
Ingredients
1/2 bag thin-cut veggie meat, 2-3 cabbage leaves, 1 cup unbleached white wheat flour, 1 sachet Vegeta soup powder (powder removed from the sachet), a little salt and pepper, bread crumbs, grape seed oil

A: 1/2 an onion, 1/2 a carrot, 100cc apple vinegar, 50cc soy sauce, 100cc mirin, 1 tablespoon maple syrup, 1 tablespoon tomato ketchup, a little salt, pepper, and lemon juice

B: 1/2 an onion, 1 eryngii (french horn) mushroom, 1/2 cup soy milk mayonnaise, 3 tablespoons of soy whip, 1 tablespoon ketchup, 1 teaspoon parsley, 1 teaspoon lemon juice, a little salt and pepper


[Recipe]
1) Soften plenty of veggie meat in warm water, squeeze it dry, and then rub Vegeta soup powder into it for taste. (You can knead it so that the veggie meat crumbles a bit.)

2) Chop the cabbage leaves finely, and add to 1) along with the flour, salt and pepper, and mix till the flour has congealed everything together. Make small oval-shaped patties and cover with bread crumbs.

3) Making the tartar sauce (B)

Finely chop the eryngii mushroom and fry in a little grape seed oil. Finely chop the onion, mix all the ingredients for the sauce together and place in the fridge to cool.

4) Making the nanban tare (A)

Slice the onion, finely chop the carrot into thin strips, heat all the tare ingredients in a saucepan till the vegetables are soft.

5) Fry the mincemeat cutlets from 2) in grape seed oil, then while still hot, dip them in the nanban tare for 30 seconds and then place on a serving dish. Top with the tartar sauce and you're done!
