|
Ginger pork made from soy protein and the nostalgic taste of grandma's sweet miso potato are great favourites! Enjoy these with the clean, fresh taste of crunchy cucumber. |
Ginger Pork
Ingredients
One bag of thinly sliced type veggie meat (one handful of the dry veggie meat is enough for one person), appropriate amounts of World Salt, black pepper and katakuriko.
Some grape seed oil, 8 tablespoons sake, 4 teaspoons white sesame
A: A piece of ginger about 5cm in length, 5 tablespoons soy sauce, 2 tablespoons mirin, 2 tablespoons maple syrup.

1) Soften the veggie meat in plenty of warm water, squeeze off all excess water, then cover with salt, pepper and katakuriko.
2) Finely grate the ginger in A and place it in a bowl, then mix together with all other ingredients in A.
3) Heat some grape seed oil in a frying pan. Place the veggie meat from 1) in the pan and fry both sides till nicely brown, then pour in the sake and mix. Add the seasoning from 2) and continue to heat for a further one minute.
4) Turn off the heat and sprinkle the white sesame on the veggie meat.

Sweet miso potato
Ingredients
10 potatoes, some grape seed oil.
A: 2 tablespoons of mixed miso, 2 tablespoons of genmai miso, 6 tablespoons mirin, 1 table spoon of maple syrup, 1/2 section of garlic (grated)

[Recipe]
1) Cut the potatoes into largish pieces and boil till moderately soft.
2) Heat some grape seed oil in a frying pan, then fry the potatoes from 1) lightly, mixing in the seasoning from A. When it's a nice fried colour, you're done!

Crunchy cucumber
Ingredients
2 cucumbers, 1/2 teaspoon Christmas Island salt, A small piece of ginger, 2 aojiso leaves, 1 myoga, 1 teaspoon of sesame oil. |
[Recipe]
1) Cut the cucumber up into small 5cm-long slabs. Sprinkle salt on them and then leave for a while. Discard water.
2) Slice up the ginger, aojiso leaves, and myoga into very thing strips.
3) Place the cucumber from 1) and the seasoning from 2) with the sesame oil in a plastic bag and rub them all together.
4) Place in fridge to cool just before eating.

Ms. A: Looks and tastes like ginger pork, but is actually much more delicious than meat!! It does not harden when cool, and the soft texture really brings out the flavour. When I made it, I thought, "Shouldn't the sake poured in before adding the seasoning be miso??" That would make the veggie meat softer and allow the seasoning liquid to soak in nicely, wouldn't it?
Ms. B: My children asked me to put the ginger pork in their school packed lunches every day! It's very simple and quick to make and healthy, too. The children like the "soy meat".
