Try making this genmai and vegetable dish with lots of mushrooms and daikon. In Japan this is called “Gomoku gohan” rice with five different vegetables. (It doesn’t have to be five, though.) This is truly the Japanese mum’s home cooking! |
Vegan/Vegetarian genmai and vegetables (Genmai gomoku gohan)
Ingredients
Genmai: Boil 3.5 cups of rice.
Vegetables: 2 packs shimeji mushrooms, 1 pack maitake mushrooms, 1 pack enokidake mushrooms, 5 shiitake mushrooms, 1 carrot, 10cm lotus root, 3 slices of fried tofu (abura-age), 1 cup boiled soybeans, 1 piece of ginger, mitsuba (Japanese wild parsley) leaves for decoration, 2 tablespoons sesame oil.
Seasoning: 3/4 cup mirin, 5 tablespoons soy sauce, 1/2 cup sake, 1 pack Vegeta Soup Mix. 1 cup water.

1) Cut all the different types of mushrooms to easy-to-eat pieces. Slice the carrot in 1cm cross-sections, then cut each of these into 4 or 5 pieces. Cut the lotus root into slices and then cut these into quarters, Cut the fried tofu into thin fingers. Chop the ginger into thin, fine strips.
2) Heat some sesame oil in a pot, add the ginger, carrot, lotus root and fry, and then add the mushrooms and fry a little more.
3) When the whole is nicely mixed and oily, add in all the seasonings, put on the lid and simmer at a medium heat for 10 minutes.
4) Add the boiled soybeans to 3), and continue to boil until the liquid evaporates.
5) Mix 4) with the nicely boiled genmai rice and serve onto dishes. Decorate with mitsuba leaves.
