Vegan/vegetarian meat substitute and potatoes (Serves 8)
Meat substitute and potatoes Here is a vegetarian version of the classic Japanese "meat and potatoes" (nikujaga) dish loved by all Japanese people.

Meat substitute and potatoes
2.5 cups finely-sliced type veggie meat, 8 potatoes, 2 carrots, 1 onion, 2 long leeks.

800cc water, 100cc soy sauce, 1 tablespoon grape seed oil, 1 bag Vegeta Soup Mix

Seasoning A: 100cc mirin, 2 tablespoons sake, 2 teaspoons maple syrup, a little cinnamon for the hidden flavour.


[Recipe]
1) Reconstitute the veggie meat in warm water till soft (10 minutes).

2) Cut the potatoes, carrots, onion, and leeks into largish pieces. (Keep the green part of the leek separately).

3) Heat some grape seed oil in a pot, add the onion, carrot, potatoes in that order while frying. When these are all nicely mixed and oily, add water, veggie meat, Vegeta Soup Mix and bring to the boil.

4) When 3) boils, turn the heat down to low, add the seasoning A, place a lid right on top of the mixture in the pot and boil for 5 minutes. Then add soy sauce and boil till soft.

5) Just before everything is nice and soft, add the green parts of the leeks.
