1) Cut the ginger and burdock root into long thin strips and lay them out on the bottom of a pot.
Pour water on the fried tofu slices to remove the oil and separate into two equal portions.
2) Place the Vegeta Soup Mix, the mirin, the soy sauce and half of the water in 1), close the lid and boil for 5 minutes.
3) Arrange the fried tofu slices around the pot (so that they do not overlap). Add the remainder of the water and place a lid right inside the pot on top of the tofu slices and heat so that the moisture evaporates and the flavour percolates around (but take care not to burn the tofu slices).
4) When 3) has cooled a little, cut the tofu slices into easy-to-eat pieces, place the ginger and burdock root on top of the rice and then line up the tofu pieces on top of that.
5) Place the green vegetable on the side of the dish, and top with the shredded seaweed. (Sprinkle on the mixed spice if you like a hot and spicy taste.)
