Baked with prunes and walnuts a chocolate cake with just a touch of bitter flavour. |
Chocolate cake
Ingredients
A: 2 cups non-bleached white wheat flour, 1 cup organic cocoa, one tablespoon baking powder.
B: 100cc maple syrup, 100cc grape seed oil, 1.5 cups soy milk, a pinch of salt, 1/2 tablespoon natural vanilla essence, (1/8 teaspoon all-spice powder if you like).
C: 15 prunes, 1 cup walnuts.

1) Pre-heat oven to 180°C. (Use the heat during this time to roast the walnuts for 5 to 6 minutes.) Chop the prunes to bite-sized pieces.
2) Sieve the ingredients in A, place ingredients from B in a bowl and mix well.
3) Pour the resulting liquid B into the flour A, mix well by scooping from below so as not to make the mix sticky or viscous, then add the chopped prunes and finely crushed walnuts and mix.
4) Pour 3) into a mould and bake in oven for 40 minutes at 180°C. (It's OK when you insert a bamboo skewer into it and nothing is sticking to the skewer when you pull it out.)
