Rooibos jelly and grain coffee jelly with a condensed milk type sauce Here's a nice wobbly jelly made with kanten (agar).

Rooibos jelly and grain coffee jelly with a condensed milk type sauce
Ingredients
Rooibos jelly: 1 bag rooibos tea, 1 litre water, 2 tablespoons maple syrup, 1/3 bag (10 g) kanten flakes.

Grain coffee jelly: 3 tablespoons grain coffee (No Caf), 1 litre water, 2 tablespoons maple syrup, 1/3 bag (10 g) kanten flakes.

Condensed milk substitute sauce (for 8): 180cc soy milk, 3 tablespoons maple syrup.

* Some soy milks do not result in the condensed milk type sauce made here. We used "Soy Dream".


[Recipe]
1) Rooibos jelly: Place a rooibos teabag in water and leave it till the water is a nice tea colour. This should take about 30 minutes. Then remove the teabag.

2) Place 1) in a saucepan and heat. Add the maple syrup and kanten and mix till boiling. Continue to mix for 5 or 6 minutes until the kanten flakes have melted.

* Grain coffee jelly: Place water, kanten flakes and maple syrup in a saucepan and heat. When boiling, add the grain coffee.

3) Pour 2) into a bowl and when cool place in the refrigerator and cool well. When cold, mash with a masher.

4) Mix the soy milk and maple syrup to make the condensed milk substitute. Place in the refrigerator to cool.

5) Pour 4) into dishes and add 3).

I felt really refreshed after eating the rooibos jelly, just like I had had my body cleaned out from the inside! The grain coffee jelly contains no caffeine so it's OK for children's snacks.

The reason why the condensed milk substitute sauce is so tasty and not at all like soy milk is because the soy milk is good??? Or because of the maple syrup??? Or both???
