Substitute Foods for Vegetarians (Meat substitutes)

Reasons for not eating meat
1. Because we know about the harmful effects on the mind and body,
2. Because there is a connection between eating meat and environmental issues,
3. Because animals are fellow beings and companions.
The vegetarian population of the world is growing because of these three reasons.
Let me introduce to you here the meat substitutes used in vegetarian recipes.

Meat substitutes
No need to worry about not having meat! If you become skilful at using the meat substitutes, you will be able to achieve a healthy and varied diet anywhere, anytime!

Dried soy protein foods (Soy vegemeat)
Dried soy protein foods (Soy vegemeat) Dried soy protein foods are used by first softening them with warm water.

You can choose the kind you need from among the block type, mincemeat type, shredded type, and thin-cut type for the dish you are going to make.


Soy protein foods (Takano tofu)
Soy protein foods (Takano tofu) You can use "Takano tofu" in boiled, fried or stir-fried dishes.

You can make instant Takano tofu if you freeze hard tofu (momen dofu) in the freezer and then thaw it out again.


Dried wheat protein foods (Wheat vegemeat)
Dried wheat protein foods (Wheat vegemeat) There are many different kinds of fu (dried wheat gluten). With a little creativity you can make various kinds of imitation dishes.

Using imitation meat made from wheat protein you can make meat slices, cutlets and steak-like items.


Fermented soy foods (Soy tempeh)
Fermented soy foods (Soy tempeh) Soy tempeh (fermented soybean cake) is like an odourless natto (fermented soybeans) shaped into a block. You can use it to make a tempeh steak or a tempeh cutlet, or you can mash it to make a sauce.

Fungi (mushrooms)
Fungi (mushrooms) Eryngii (French horn) mushrooms and shiitake mushrooms have the taste and texture of pork.

You can sauté thick and good quality shiitake mushrooms to make a very good steak which is quite good enough for a main dish.


Frozen konnyaku, okara konnyaku
Frozen konnyaku, okara konnyaku If you can find konnyaku, if you first freeze it in the freezer and then thaw it out again it has the texture of animal intestine. In boiled dishes it is very nice if you let the flavours seep into it. Also, if you tear up some okara konnyaku with your fingers and add some flavour to it before cooking, it has a texture like yakitori (skewered grilled chicken).

Beans
Beans There is a large number of varieties of beans, but you can make various kinds of dishes from them. For example try mashing boiled beans to make a "hamburger" or rolling them into balls and deep frying them, and so on.

Various kinds of unrefined grains
Various kinds of unrefined grains There are various kinds of grains, such as buckwheat (soba), foxtail millet, barnyard grass, tall millet, adlay (hatomugi), oats and these can be ground and used as substitute meats.

You can make a great variety of dishes with these with a little creativity. For example, hamburgers, croquettes, Chinese shao mai and so on.


Ham-type vegetable protein foods (Vegetus foods made with soy beans)
Ham-type vegetable protein foods (Vegetus foods made with soy beans) Just slice them as they are to make ham sandwiches or salads, or grill them to make ham steaks, or deep fry them to make ham cutlets, and so on,

Sausage-type vegetable protein foods (Linketts)
Sausage-type vegetable protein foods (Linketts) Linketts are a sausage-type soy protein food.

You can grill it and put it in a packed-lunch or use it for several kinds of dishes, such as pilafs gratin, sandwiches and so on.

(Some of these products use egg albumen and so are not recommended for 100% vegan-vegetarians.)


Corned beef-type vegetarian protein foods (Soyees)
Corned beef-type vegetarian protein foods (Soyees) Soyees is a corned beef-type vegetarian protein food.

You can use it in various dishes, such as salads, pilafs, fried noodles, sandwiches and so on.


Just a slightly serious topic!
- What the meat-eating habit brings about -
Without us being really aware of it all the time, our bodies and minds are being harmed by the meat-eating habit.

The meat we see nicely packed and displayed in supermarkets and department stores, and the steaks and so on that come out all mouth-wateringly cooked in restaurants; well, someone had to shoot a bolt into the head of an animal and then cut it off with a saw, take out the innards, and cut up the body for us (or are machines doing this now?). I don't think there's anyone who can put this idea out of mind with a clear conscience.

Everyone unconsciously feels that there is something wrong here and this has an effect on the heart and the mind.

What this indicates is that the natural sensor that we are all born with helps people notice that they feel good about things and feel unpleasant about things that are wrong.

Before it became food, the meat we eat in everyday life without thinking about it very much was a "living being" in which red blood flowed just as in a human. We should not forget this fact...
